The total soluble solids increased from control mango fruits (untreated) from the initial to 9th days and then, it declined. Similarly, the other treatments such as 100, 150 and 200 ppm salicylic acid also increasingly provided TSS from the initial to 12th days and afterward, 100 ppm SA treated fruits decreased at 15 days. Hydrolysis of starch and other insoluble carbohydrates into sugar was the reason for an initial increase in the TSS of fruits whereas a slight decrease in the later stage was due to the utilization of soluble solids in the respiratory process. Fruits treated with 200 ppm of salicylic acid were the slowest to reach their TSS peak. This happened possibly due to the slowdown of ripening resulting in lower TSS accumulation.
