Current molecular breeding and back-end processing technologies can already support the development of varieties with low ANF and high nutritional value, and metabolomics also provides new tools for component tracking and precise regulation. In the future, we may witness the emergence of more legumes that are safer and more nutritionally comprehensive. It is not just about supplementing staple foods. They are also expected to offer multiple solutions to malnutrition problems, food security challenges, and the sustainable development of agriculture. Especially those leguminous resources that have not yet been widely utilized, if they can play a role in food diversity, may also become "potential stocks" in the global nutrition system.
